The color change of mint leaves has been analyzed using two methods: the values provided by the direct measurement of a scale colorimeter , and the values of , the analysis of photographs from a digital camera. The leaves were dehydrated in a drying tunnel with hot air at 50 °C and 1 m/s speed, the time used was 220 min. Both results were compared, and it was found that the difference between the values was less than 5%, the linear model and the program provided by the MATLAB software were also used, in both, the difference of the values was less than 3%. The color change was , the and .
