This study examined gelatin extraction from chicken skin using varying citric acid concentrations (0.4-1.6%) via water bath. Yield, moisture content, and pH were analyzed per Indonesian SNI and GMIA standards. The highest yield (14.33%) and moisture content (16.09%) occurred at 1.3% citric acid, with moisture within the 16% SNI limit. pH values at 0.4-1.3% citric acid (4.5-3.80) met the GMIA standard (3.8-5.5), but 1.6% citric acid resulted in a lower pH. A 1.3% citric acid concentration appears optimal for yield and moisture, but effective washing is crucial for pH compliance, especially at higher acid concentrations.
