Beef is a nutritionally valuable food, but its high water content predisposes it to rapid spoilage if post-slaughter handling is inadequate. This study aimed to evaluate the effects of electrical stimulation (ES) on postmortem pH reduction and its influence on beef quality. Conducted in a slaughterhouse in Rolim de Moura, RO, Brazil, the research involved 14,121 carcasses, comparing groups with and without ES, alongside paired carcass analyses. Results confirmed that ES accelerates pH decline by stimulating muscle contractions, enhancing glycolysis and lactic acid production, which in turn promotes faster rigor mortis resolution. This process improves tenderness, color, and water-holding capacity, while reducing the incidence of carcasses with high pH (>5.8), a key criterion for the Chilean export market. Younger and male cattle showed better responses due to higher enzymatic activity. Although rapid pH decline must be carefully controlled to avoid PSE (pale, soft, exudative) meat, the findings reinforce ES as an effective strategy for improving beef quality and ensuring compliance with international standards. This technique strengthens Brazil’s position in the global meat trade by enhancing product quality and meeting consumer expectations.
