Resumo

Considering the increasing complexity of food production chains and the persistence of resistant microorganisms in industrial environments, this study addresses the role of Good Manufacturing Practices (GMP) and sanitation procedures in microbiological control. It aims to critically analyze the impact of these practices on the mitigation of resistant bacteria in food processing lines. To this end, a systematic literature review was conducted following the PRISMA 2020 protocol, including 19 original studies published between 2020 and April 2026, retrieved from databases such as ScienceDirect, Scopus, Web of Science, PubMed, and Google Scholar. The findings indicate that the effectiveness of control strategies is directly associated with the consistent application of GMP, standardized sanitation procedures, and continuous microbiological monitoring. However, evidence also highlights microbial persistence on surfaces, biofilm formation, and recontamination throughout processing stages. It can be concluded that effective microbiological control in industrial environments requires integrated approaches involving risk management, food safety culture, and continuous improvement of sanitation practices, which are essential for mitigating resistant microorganisms.
